Looking for a super easy low carb meal? I got you.
We really enjoyed this quick and savory meal, and can't wait to have it again.
What you need:
-1 lb Beef flank steak for stir-fry (The steak comes cut up in strips)
-1 Green bell pepper
-1 White onion
-Baby Bella Mushrooms
-Sliced provolone cheese
-Fresh or minced garlic
-Season salt or salt and pepper for your seasoning preference
-Olive oil
-Table spoon of butter
This is where I get super professional
Directions:
-Preheat oven to 350
-Throw your flank steak in a pan and start cooking
-Add a drizzle of olive oil, butter, and season salt, pepper, 2 spoonfuls of minced garlic (or a few bulbs of chopped garlic)
-Chop half a bell pepper and 3/4 of a white onion, throw that in your pan (could do more or less here)
-Grab a handful of mushrooms and add to your pan
-Once everything is "fairly cooked," transfer everything to an oven safe pan including the juices
-Add several slices of provolone cheese directly on top of your mixture of steak and veggies
-Cook in the oven for about 10 min and then broil on high for 3-5 minutes. Watch so you don't burn your cheese too much.
This was enough for me and my husband, so we just had the one pan meal. You could totally make a salad or potatoes for a side. If you have a family of four just grab 2 lbs of steak. I used my leftover onion and bell pepper for a separate meal, but you may prefer to use the entire bell pepper.
