Copy Cat Starbucks Egg Bites

Yummy low carb breakfast or snack


I love Starbucks egg bites, but they are about $4 for two eggs. I decided to try and make them.


This makes 1 pan of 12 egg bites

What you need:

-1 muffin baking tin

-Cooking spray

-8 eggs

-Milk

-Salt and pepper

-Graded Mozzarella cheese

-Half of a red bell pepper

-Hand full of mushrooms


Directions:

-Preheat oven to 350

-Crack 8 eggs in a bowl

-Whisk the eggs and 1/4 cup of milk + salt and pepper to taste

-Chop half a red bell pepper and hand full of mushrooms in small pieces

(You can mix all of these ingredients with your eggs, but I made my son a few with just egg and cheese so I kept the eggs and the veggies separate)


-Spray your muffin tin with cooking spray

-Pour your eggs evenly in each section

-Drop in your veggies

-Add your graded cheese on top and stir in with a spoon

-Wipe down all edges and top of the muffin pan clean and free of egg and spray so it doesn't burn

-Put in the oven for 15 minutes


Last week I made this same thing with breakfast sausage and Mexican blend cheese.


You fully cook the sausage in a skillet and then add it to the uncooked eggs to be baked. I also did 12 eggs last week and was able to make 24 egg bites.
