Easy Low Carb Dinners

3 quick, easy, and semi-healthy dinner ideas


If you have ever read any of my recipes, you know I am no professional cook; and I try to get straight to the point. I mostly do everything to taste, so just go with me here - HA!


1. Supreme Pizza Bake

My son loved this one, obviously!!


What you need

-Choice of noodles (Optional, you could do this without noodles)

-1 lb Ground beef

-1 Green pepper

-Pepperonis

-Black olives

-Mushrooms (I forgot to put on my grocery list, but meant to add mushrooms)

-Shredded mozzarella cheese

-Marinara sauce ( These are my two favorites sauces: 1 & 2)

-Garlic Salt

-Oregano and/or Italian seasoning


Directions

-Preheat oven to 350

-Cook noodles on the stove

-Fully cook ground beef, season with garlic salt, and Italian seasoning to taste on the stove

-Chop green onion and add to ground beef

-Pour in marinara sauce

-Mix all together in an oven-safe pan

-Layer pepperonis, black olives, mushrooms, and mozzarella on top

Cook in the oven for 10 min


This makes so much food you could feed a family of 4 easy, or have plenty of leftovers.


2. Tomato Basil Chicken

This ended up being one of my favorite meals ever. Maybe because the tomatoes came straight from our garden.


What you need

-Thin chicken breasts

-1 Tomato

-Sliced deli mozzarella cheese

-Season salt, garlic powder, pepper, sea salt, olive oil

-White cooking wine (Don't sleep on this, it makes it so juicy and flavorful)

-Fresh basil

-Asparagus

-Lemon juice


Directions

-Preheat oven to 350

-Season chicken with olive oil, season salt, garlic powder, and pepper

-Cook chicken on stove for about 4 min on each side

-Add white cooking wine when your chicken is almost cooked all the way through

-Asparagus: cover with olive oil, lemon juice, and sea salt

-Slice tomatoes

-Put chicken in a oven-safe pan (I cooked the asparagus on the same pan)

-Place uncooked tomato slices directly on top of chicken

-Add mozzarella on top of tomatoes

-Fresh basil on top (I only had dried basil that I put under the cheese so whichever will work, I just think fresh would give it a better taste)

-Cook for 15 min (the extra time is for the asparagus, so adjust if you do this separately)


I wish I had balsamic drizzle/glaze to put on top


3. Creamy Jalapeño Chicken

What you need

4 thin chicken breasts

1-2 Jalapeños

1/2 Block of cream cheese

1 Tablespoon of butter

2 "dollops" of sour cream

Block of Monterey Jack Cheese

Chili Powder, garlic powder, onion powder, season salt, olive oil


Make it

-Preheat oven to 350 (my standard temp LOL)

-Cook chicken breasts on the stove

-Season with olive oil, season salt, garlic powder, and onion powder

-Slice jalapeños

-Mix in a microwave-safe bowl: butter, cream cheese, and sour cream and heat for 30-45 seconds

-Put fully cooked chicken in an oven-safe safe pan

-Cover chicken with your "cream" creation (butter, sour cream, cream cheese)

-Freshly grate your Monterey Jack on top (as much cheese as you want, girl!)

-Sprinkle chili powder on top

-Add jalapeños (another veggie we got from our garden)

-Cook for 10 minutes


This was sooooo good! We had Goya Spanish rice and avocado on the side, but it would be great with black beans or cilantro lime rice.
