Who knew salmon was so easy?
Salmon is typically my go to at a nicer restaurant, but I just recently got brave enough to try it at home.
I finally bit the bullet and added salmon to my H-E-B order and I can’t believe I waited this long! I’ve gotten it twice on sale, and it's best to get wild caught.
What you need:
1 lb wild caught salmon (this will feed two)
1-2 lemons
1-2 Fresh garlic bulbs
Butter of choice (I use Land O Lakes)
Parsley
Thyme
Directions:
Preheat oven to 350
Cut off the thin layer of fish scales
Line a pan with foil
Chop 1-2 cloves of garlic
Warm 1-2 table spoons of butter in the microwave
Add garlic to butter and poor over the salmon
Squeeze half a lemon on the salmon
Sprinkle parsley and thyme on your salmon
Slice the other half of your lemon and place on top of the fish while cooking
Cook for 10-13 min depending on oven
Broil for 2-5 min if you want to crisp it up on the edges a bit (watch so it doesn’t burn)
I typically cook asparagus for my side on the same pan as the salmon, but I forgot to grab some this time. I ended up making white rice with basil and sea salt.
For asparagus I would grab an extra lemon and add sea salt and pepper
This is seriously so easy and a very quick meal!
