Chicken Tortilla Soup

When you see my recipes, just know I'm not a chef and I simplify directions and ingredients as best as I can!


It will be getting cooler soon, so be sure and add this to your weekly meal list!


What you need:

Feeds 2-3 (Add more chicken if there are more people you will have plenty of soup to feed more

-2 Chicken breasts or 5/6 raw tenders (I like using tenders because they cook quicker and are easier to shred

-2 Cups Chicken Broth (I use low sodium) Add more as you need

-1/2 Cup of water

-Can of black beans

-Can of Rotel (I don’t use a full can, just preference)

-3 Cloves of fresh garlic (best part)

-Olive Oil

-Fresh cilantro (I also use dried cilantro to cook in the soup)

-Mexican shredded cheese

-Season salt of choice, chili powder, cayenne pepper


Directions:

-Pour Chicken Broth, water, black beans, and Rotel into a pot and start simmering

-Sprinkle in dried cilantro

-In a separate pan season and cook your chicken breast (I pour in Olive Oil then season with season salt, chili powder, and cayenne pepper to taste)

-While your chicken starts to cook, chop your garlic and throw it in with the chicken

-Shred or chop your chicken


How to serve:

-You could definitely mix the soup and chicken together, but I usually keep it separate so everyone gets enough chicken

-Put soup and chicken into a bowl

-Add fresh cilantro and cheese on top

-Also good with sour cream, avocado, and lime juice


We usually just eat with chips, but traditional tortilla strips would be great! Corn would be something else that you could add. I make a different taco soup with corn so I don’t like to add it in our tortilla soup.
